FIOR DI LATTE
This fresh mozzarella is ready to be consumed ideally at room temperature. It is preserved in a brine that enables it to retain moisture and shape. It is characterised by a soft moist texture and milky flavour.

BUFFALO
Using Australian buffalo cow milk and made following Italian traditions, our delicious balls of buffalo are smooth, creamy and lightly tangy.

NODINI
Nodini mozzarella is a really common mozzarella cheese, characterized by knot-like shape. The nodini are plesantly chewy. The milky flavour is perfect to be combined with other ingredients, including for example fresh veggie.

PIZZA MOZZARELLA
Created to have a perfect fat and moisture content as to avoid browning when melting in the oven, it is sure to enhance the quality of every pizza.

MASCARPONE
It is made by using Lombardy traditions. Mascarpone is a rich, smooth, spreadable fresh, original from Italian cream cheese. It is added to both savory and sweet dishes such as tiramisu. We make it only using Fresh Australian Cream.

BOCCONCINI
Are small mozzarella cheese balls. Like Fior Di Latte, they are semi-soft, white, and rindless unripened mild cheeses that originated in Naples. Nowadays, they are made from Australian grass Fed cow's milk. Bocconcini are packaged in brine, have a spongy texture, and absorb flavors. It is made in the pasta filata manner, by dipping curds into hot water or whey

RICOTTA
Everybody know this product. Our soft and creamy ricotta can go pretty much in all the dishes.

BURRATA
Originating in the South of Italy in the early 20th this delicate, shiny and rich cow milk cheese is a work of art. The stretched mozzarella curd is filled with ripped fresh curd and delicate cream. Serve it at room temperature to fully enjoy the flavour and texture.

STRACCIATELLA
It is made by stretching the mozzarella curd into a long silky scarf and then pulling it delicately apart. The strings are then mixed with milk cream. This versatile product is great on pizza, pasta, risotto or entrees.

HALLOUMI
With a high melting point our halloumi is perfect for frying or grilling. Made using most jersey milk, it has a flavor that is unmatched and it is also much less salty than other similar products on the market.

SMOKED SCAMORZA
This semi hard cheese is lightly smoked and season for two months. The final result is a dry and versatile product that can be baked or use fresh as is.

PERLINE
Perline means “little pearls” in Italian, so perline mozzarella refers to mozzarella cheese made into small, 10 grams each, pearl-sized balls. They are really good to create a salad or as pizza or pasta topping.
